Ingredients

  • 2 slices of good-quality bread (sourdough or multigrain)

  • 1 ripe avocado

  • 2 eggs (fried, poached, or boiled)

  • 1 tsp lemon juice

  • Salt and pepper to taste

  • A healthy glug of Moja chilli oil 

  • Fresh herbs or microgreens for garnish

Instructions

  1. Toast the bread until golden and crisp.

  2. While the bread toasts, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

  3. Mash the avocado with lemon juice, salt, and pepper until smooth but still a little chunky.

  4. Cook your eggs to your preferred style—fried sunny-side-up, poached, or soft-boiled.

  5. Spread the avocado mixture generously over the toasted bread.

  6. Place the eggs on top, season with extra salt and pepper, and finish with a drizzle of Moja chilli oil.

  7. Garnish with fresh herbs or microgreens. Serve immediately.
